A good quality fish sauce usually has three fundamental ingredients: fish paste (made from fermented anchovies or shrimp), sugar and salt. To sidestep unnecessary extras, such as E-numbers, bulking agents or extra flavourings, look for a fish sauce with as few ingredients as possible.
While E-numbers are simply food-safe ingredients named using a code to show they are approved for consumption in Europe, some people prefer to avoid them. All of us know those whole foods with minimal processing, that aren't highly refined or excessively flavoured, are best for health overall.

Check your fish sauce so you know whether the salt content is considered high, medium or low according to UK nutrition standards. According to the NHS, adults should not consume more than 6 grams of salt each day (the equivalent of one teaspoon).
